A finished Neapolitan-style pizza on a wooden peel resting at the mouth of a domed pizza oven, its crust charred black on one side and pale on the other, the glowing fire at the back of the pizza oven stone floor softly blurred behind.

Pizza Oven Uneven Bake: Burnt Edge, Raw Middle, Pale Bottom

A pizza oven uneven bake shows as a crust charred on the fire side and pale on the other, a top that blisters while the bottom stays soft, or pies that come out differently from one spot on the floor to the next.

What it
usually means.

Every pizza oven has a hot side. In a wood dome it is the side with the fire, and the flame rolling over the ceiling cooks the top while the floor cooks the bottom. In a gas oven with a burner along the back or one side it is the same, only steadier. That is why pizzaiolos turn each pie. When the bake is lopsided far beyond what turning fixes, or the bottom and top are out of step, look at the heat store and the airflow. A floor that has not soaked long enough leaves the bottom pale while the top scorches. A floor spot used pie after pie at dinner rush cools down while the rest stays hot. Flour, cornmeal and grease built up on the deck insulate one area and burn in another. On a gas oven, part of the burner may be blocked so the flame only reaches one corner. On an electric deck, the top and bottom elements may be set out of balance, or one has failed. Conveyor ovens have their own uneven bake page.

A technician in a plain gray work shirt kneels beside a cold stainless outdoor pizza oven on a patio, shining a small flashlight into the pizza oven's mouth at the stone floor, the burner shield visible at the back, his hands away from any gas fitting, plants softly blurred behind, daylight, seasonless. The 6 causes, cheapest first

Answer these first

01

Is the burnt side always toward the fire or burner, however the pie is turned?

02

Is the top done long before the bottom, or the other way around?

03

Are the pies launched in the same spot every time during a rush?

04

When was the floor last brushed and scraped of flour and burnt bits?

05

On a gas oven, does the flame run the whole length of the burner?

Check these
before you book.

Pizza oven uneven bake: 5 checks, and none of them costs anything.

01

Turn each pie a quarter turn with the peel every half minute or so, and see how much that evens it out.

02

Preheat longer, until the floor is fully soaked, before judging the bake.

03

During service, move the launch spot around the floor instead of using one place.

Also worth checking

  • Brush the floor between pies and scrape it when cold; a clean stone bakes evenly.
  • On a gas oven, watch whether the flame runs the full burner, and book if part of it stays dark.

How soon does it need a visit?

An uneven bake is never urgent. It is booked when turning, preheating and a clean floor leave one side still burning and the other raw.

6 things pizza oven uneven bake: burnt edge, raw middle, pale bottom turns out to be, from pies not turned during the bake to deck element failed or top and bottom out of balance.

The cost guide
  1. 01 no repair

Pies not turned during the bake

The side facing the fire cooks faster in any dome. A quarter turn with the peel every so often evens it out.

  2. 02 no repair

Floor not soaked through before baking

A dome that looks hot while its floor is not leaves the bottom pale and the top charred. A longer preheat, or moving embers across the floor for a while, fills it.

  3. 03 no repair

One spot of the floor used for every pie

At the rush, the same few inches of stone give up their heat and cool. Moving the launch point across the floor lets each spot recover.

  4. 04 lowest

Flour and burnt residue built up on the deck

A layer of burnt cornmeal and flour insulates part of the stone and smokes. Brushing between pies and scraping the cold floor clears it; a cleaning visit handles a stubborn crust.

  5. 05 low

    Burner partly blocked

When only part of a gas burner flames, one corner of the oven runs hot. The burner is cleaned or replaced so the flame runs its full length.

  6. 06 moderate

Deck element failed or top and bottom out of balance

An electric deck with top and bottom elements bakes lopsided when one fails or the controls are set far apart. The elements and controls are tested.

Questions about
pizza oven uneven bake: burnt edge, raw middle, pale bottom.

Why is the top of the pizza burnt while the bottom is still soft?
The dome is hotter than the floor. A longer preheat, or letting the fire die back a little before baking, brings them into step.
Why is the bottom black but the cheese barely melted?
The floor is too hot compared to the dome, often after the fire was pushed aside. Adding a small piece of wood to lift the flame over the ceiling balances it.
Does flour on the floor really change the bake?
Yes. Scorched flour and cornmeal insulate the stone and leave a bitter taste. Use only as much as the peel needs, and brush between pies.
Our gas pizza oven bakes darker on the left. Is that normal?
Some sidedness is normal toward the burner. If it is new or much stronger than before, the burner may be partly blocked and is worth a visit.
