Needs a visit now

Four problems are pinned above everything else on this page, because what they endanger is the person holding the peel, the staff behind the counter and the roof above the flue, not tonight's pies. A gas smell at the oven or along its supply line: turn the burner off, close the gas shutoff, strike nothing and flip no switch, open the doors, walk everyone out, and call the gas utility or 911 once you are outside. Fire where it does not belong, rolling out of the mouth into a canopy or an awning, glowing behind the control panel or roaring up the chimney: close the gas, keep everyone well back and call 911. A hot electrical or burning smell from a deck, conveyor or rapid-cook oven: switch its breaker off and leave the panel closed. Smoke pouring into the room instead of up the flue: open the windows, put no more wood on, let the fire burn down and keep people out of the room. In all four, the gas fittings, the wiring and the chimney stay untouched until a technician is on site.

Gas, fire or smoke at the oven

Pizza Oven Smoke Filling the Room Instead of Leaving by the Flue

Pizza oven smoke in the room means the smoke is spilling out of the mouth into the dining room, the kitchen or a covered porch instead of rising up the flue, often thick enough to set off alarms.

Causes, cheapest first

  1. Wet or green wood making more smoke than the flue can takeno repair
  2. Flue still cold at startupno repair
  3. Room starved of air by an exhaust fanlow

Everything else we are called out for

Nothing else in this list puts anybody at risk. A dome may take twice as long to come up to heat as it did last spring, the crust may char underneath while the cheese stays pale, a hairline crack may open across the floor after the first cold night, the conveyor may carry pies through a shade too fast, or the pilot may need a second try on a windy evening, and each of those waits for a normal appointment. Every page says what you can look at with the oven cold and the gas closed before anyone is sent.

Gas Pizza Oven Won't Light: Clicks, Gas Hiss, Still No Flame

A gas pizza oven won't light when the knob turns and the igniter clicks but no flame rolls along the burner, or when a deck oven's ignition tries, stops and locks out before any flame is proven.
7 causes

Pizza Oven Pilot Won't Stay Lit Once the Knob Is Released

A pizza oven pilot won't stay lit when the small flame catches while the knob is held in and then dies as soon as it is let go, or keeps blowing out through the day on a deck oven.
6 causes

Pizza Oven Not Getting Hot Enough to Bake a Crisp Crust

A pizza oven not getting hot stalls short of baking heat: the floor stays pale, the pies take far too long, a wood dome never clears from black to white, or a deck oven cannot reach its set point.
7 causes

Pizza Oven Uneven Bake: Burnt Edge, Raw Middle, Pale Bottom

A pizza oven uneven bake shows as a crust charred on the fire side and pale on the other, a top that blisters while the bottom stays soft, or pies that come out differently from one spot on the floor to the next.
6 causes

Pizza Oven Floor Cracked: Split Tiles, Lifted Bricks, Crumbling Stone

A pizza oven floor cracked into lines across the cooking tiles or a deck stone, with edges that lift and catch the peel, pieces that crumble, or bits of stone sticking to the bottom of the pies.
6 causes

Pizza Oven Dome Cracked Inside or Out After Rain or a Big Fire

A pizza oven dome cracked shows as lines in the inner brick or refractory ceiling, cracks through the outer render or stucco, or smoke and light slipping through a gap in the shell.
6 causes

Wood-Fired Pizza Oven Smoking Heavily Out of the Chimney Top

A wood-fired pizza oven smoking too much sends thick gray or yellow smoke from the chimney long after startup, leaves the dome black, and bothers the neighbors even though the smoke still goes up the flue.
6 causes

Deck Oven Temperature Drifting Away From the Dial Setting

Deck oven temperature drifting means the pizza deck runs well above or below what the dial or display says, swings through the day, or bakes differently on each deck at the same setting.
6 causes

Conveyor Oven Belt Not Moving or Stopping Mid-Bake

A conveyor oven belt not moving leaves pies sitting in the tunnel burning, or the belt jerks, slows and stops while the heat and blowers keep running.
6 causes

Conveyor Oven Uneven Bake Across the Belt or From End to End

A conveyor oven uneven bake sends out pies browned on one side of the belt and pale on the other, burnt edges with raw centers, or different results from one lane to the next.
6 causes

Pizza Oven Door Warped, Hinge Broken or Seal Worn Out

A pizza oven door damaged by heat no longer fits the mouth, leaves a gap along its edge, has a broken hinge or spring, a scorched handle, or a gasket that has crumbled away.
6 causes

Black Soot Streaks on the Pizza Oven Arch and Front Face

Pizza oven soot on the front shows as black streaks rising from the mouth onto the arch, the facade or the stucco above, sometimes spreading onto a canopy, a wall or the ceiling.
6 causes

Pizza Oven Error Code on a Deck, Conveyor or Rapid-Cook Display

A pizza oven error code shows as letters or numbers on the display of a conveyor, deck or rapid-cook oven, a flashing light on its panel, or a message about ignition, heat, belt or airflow.

The repairs behind the symptoms

Most people arrive knowing what they are seeing, not what is wrong. These are the jobs a visit usually turns out to be.

diagnostic

Pizza oven diagnostic visit

One visit to learn why the pizza oven will not light, heat, hold temperature or draw: gas, flame, stone, chimney, belt and controls each checked.

low to moderate

Pizza oven burner and igniter repair

Pizza oven burners cleared or replaced and igniters fitted and gapped, so the flame lights first time and burns blue and steady under the stone.

low to moderate

Pizza oven gas valve and thermocouple repair

Safety valves, pilots, thermocouples, flame rods and regulators replaced and leak-checked, so the gas stays on while there is flame and shuts when there is none.

moderate to highest

Pizza oven floor and dome repair

Cracked or spalled hearth bricks and stones reset or replaced, dome and arch cracks packed and sealed, and the oven cured back up slowly.

moderate

Pizza oven thermostat and control repair

Thermostats calibrated or replaced, probes, timers, boards and displays repaired, so the pizza oven holds the temperature the cooks set and shows the right number.

moderate

Deck oven element and deck repair

Burned-out deck oven elements, contactors and wiring replaced, and cracked or rocking deck stones changed, so every chamber bakes evenly from front to back.

moderate

Conveyor oven belt and motor repair

Conveyor oven belts, sprockets, drive motors, gearboxes and speed controls repaired, so pizzas ride through the tunnel at the set speed and never stall inside.

moderate

Pizza oven blower and fan repair

Impingement blowers, cooling fans, bearings, belts and air fingers repaired or replaced, so hot air reaches every lane of the pizza oven evenly.

low to moderate

Pizza oven door and chimney repair

Pizza oven doors, hinges, springs, gaskets and heat shields repaired, and chimneys cleaned, capped and set to draw, so heat stays in and smoke goes up.

lowest

Pizza oven cleaning and safety inspection

A full cleaning of the pizza oven's burners, floor, fingers, chimney path and vents, with a gas leak check, flame check and written safety report.

Questions about
the problems.

My pizza oven problem is not listed. Can I still book?
Yes. The list follows what pizza oven owners ring us about most, and anything else is just as welcome. Describe what you see, hear or smell at the oven in the notes, and the technician starts there.
The floor stays cool and the tops come out pale. Which page do I read first?
Open the page for whichever sign you noticed first. A cool floor and pale tops often share a cause, such as a burner starved of gas, a thermostat reading low, a dome that soaked up rain or a door gasket letting the heat out, and every page links its related problems at the bottom.
Which pizza oven problems need a visit today?
Four: a gas smell at the oven or its supply line, fire escaping the mouth or showing behind the panel or up the chimney, a burning or hot electrical smell, and smoke filling the room instead of leaving by the flue. Those pages carry a flag; a slow preheat, a pale crust or a hairline crack can wait for the booked day.
Is a pizza that baked in a cooling oven safe to serve?
It depends on the toppings. Raw meat, poultry or egg on a pie that came out underdone should go back into a hot oven at once or be thrown out, never set aside to finish later. A food thermometer settles it: USDA guidance puts poultry at 165 °F, ground meat at 160 °F and leftovers reheated at 165 °F.
