What is particular
to Middleby Marshall.

The PS-series (PS520, PS540, PS638, PS640, PS3240) are the classic impingement conveyors; the X-Series (X55, X55GWB) and the countertop X20 and X26 are newer; the DZ and LongWave models are infrared. Gas and electric versions use different parts, and stacked ovens are serviced one deck at a time.

A gas ignition with a set rhythm

A PS638 gas oven runs its main blower for 15 seconds, holds the burner at full valve for 60 seconds to light, then drops to a low flame for 80 seconds to clean the flame sensor before ramping up. If the flame is lost, it tries three spark and purge cycles before locking out, so a slow start is not always a problem.

Air fingers that must go back in order

Hot air reaches the pizza through removable fingers above and below the belt. The PS640 manual warns that fingers reassembled incorrectly after cleaning change the bake, and traces little or no air from the fingers to that reassembly.

A photo eye and energy modes

The PS638 can use a photo eye at the loading end to raise the blowers only when product goes in, and the PS640 steps down through energy modes when the belt is empty. A belt that stops or blowers that go quiet between orders are often these modes at work.

Split belts with their own drives

Dual-belt ovens show two bake times and report the front and rear belts separately, so one lane can stop while the other keeps baking. The X-Series goes further and runs each belt from its own drive board and breaker.

Parts

Why won't my Middleby Marshall belt move after I turn it on?
The conveyor stays still until the oven reaches its set points. If the screen shows the belt off while warming, wait; if the oven is hot and the belt still will not run, look for a jam with the oven off and cool.
My Middleby Marshall bakes differently since we cleaned it. Why?
The air fingers were probably put back in a different order. Middleby Marshall warns that incorrect reassembly changes the bake, so check them against the finger layout from your manual.
How long does a Middleby Marshall gas conveyor take to light?
On a PS638 the ignition sequence alone takes over two and a half minutes: a 15-second purge, 60 seconds lighting and 80 seconds at low flame before full power. That is normal.
