Pizza Oven Repair

A TurboChef call starts with the menu item that came out wrong and the recipe setting it ran on, since a rapid-cook oven follows those settings to the second.

TurboChef pizza ovens,
specifically.

TurboChef, a Middleby company in Carrollton, Texas, builds all-electric high-speed ovens instead of stone decks: the High h Conveyor in three widths, the Single Batch and the countertop Fire artisan pizza oven among them. Every one of them cooks with fast-moving hot air, so a visit usually starts at the blowers, heaters, jetplates and filters rather than at a burner.

TurboChef builds 1 of the 4 pizza oven types this site covers. Which one decides how the visit is planned.

What is particular
to TurboChef.

The High h Conveyor comes in 1618, 2020 and 2620 sizes for pizzas up to 16, 20 and 26 inches, with single or split belts; the Single Batch takes a 16-inch pizza and the Fire bakes 14-inch fresh-dough pizzas at up to 842°F. Each has its own manual and its own list of codes.

Heat carried by air, not by a stone

TurboChef ovens push heated air through jetplates above and below the food. On the Single Batch the manual insists both jetplates stay installed while cooking, and most of the codes the ovens show are about that air: a blower that will not prove itself, a chamber that runs hot or cold, cooling air that is blocked.

Ventless, with a listed exception

The HhC 1618, 2020 and 2620 conveyors carry a UL ventless listing, so they often sit on a counter with no hood above. TurboChef excludes fatty raw proteins such as raw bacon and bone-in chicken from that listing, which matters when a shop changes its menu.

Two controllers on the same conveyor

The HhC owner's manual covers a newer One-Touch touch screen and an older legacy keypad. The F-numbered codes are listed for the legacy controller, while the One-Touch keeps an error log in its settings screen, so the first question on a visit is which controller the oven has.

An emergency stop that is not an off switch

The HhC keypad has an emergency stop key that shuts down the belt and heaters at once. TurboChef warns against using it as an everyday off switch, because the normal shutdown lets the cooling fans keep running until the oven is safe.

Parts

TurboChef publishes part numbers for the HhC blower motor and its controller, the control board, display, thermocouple, cooling fan, air filter and gear drive. The oven's model and serial number decide which version of each is ordered.

Repair or replace

A TurboChef is a heavy commercial investment, and a blower, heater, relay or belt drive is usually worth replacing. When the control board and display both need changing on an older legacy-controller oven, compare the work against moving to a current model.

Questions about
TurboChef pizza ovens.

Does a TurboChef conveyor need a hood?
The HhC 1618, 2020 and 2620 are UL-listed for ventless use, stacked two or three high depending on size, for everything except fatty raw proteins. Local codes still decide, so check with your inspector before removing a hood.
Why does my TurboChef keep running its fans after I switch it off?
The oven cools itself down before going to its off state. The fans stay on until the chamber drops below 150°F, which protects the controls; wait for Oven Off before cleaning or unplugging.
Where is the high-limit reset on a TurboChef pizza oven?
The Fire has a button in the back-left corner of its base, and the Single Batch has one on the rear wall near the power cord. Press it only on a cool oven, and book a visit if it trips again.
Which TurboChef ovens do you service for pizza?
We work on the High h Conveyor, the Single Batch and the Fire artisan pizza oven. Bring the model number from the data plate so the right manual and parts are on the van.
