A stainless outdoor gas pizza oven on a stone counter on a patio, a pizza oven with a wide low mouth and a blue gas flame rolling along the back wall under its dome, a golden pizza sitting on the stone floor inside, the pizza oven clearly the subject, plants softly blurred behind, daylight, seasonless.

Mugnaini pizza ovens,
specifically.

Mugnaini, in Healdsburg, California, has brought Italian refractory clay ovens to the US since 1989, as pre-assembled ovens, masonry kits that a builder encloses on site, portable ovens and commercial ovens, each offered for wood, gas or both. Because many Mugnaini ovens live inside an enclosure someone else built, service starts with the enclosure, the vent and the curing history as much as with the oven.

The Mugnaini lineup

What is particular
to Mugnaini.

Residential ovens are the Piccolo 80, Medio 100 and 110 and Prima 100 and 120, as pre-assembled ovens or masonry kits, plus the Piccolo 60 and 75 portables; commercial ovens run from Model 100 to 180 by 180, with mobile trailers and a rotating oven. Each can be wood, gas or combination fired, so we ask which one before a visit.

Refractory clay that has to be cured

Mugnaini ovens are cast from Refrattari Cotto refractory clay, and Mugnaini sets a four-day curing schedule to drive the water out without thermal shock. Fine, shallow cracks inside the dome are expected; cracks from overfiring or a skipped cure are the ones Mugnaini excludes from coverage.

The enclosure must keep water out

Mugnaini warns that water getting into the floor and dome pieces, through a poorly sealed enclosure or through the arch, makes the masonry decay. A dome that seems to fail from the inside is often a roof or stucco leak on the outside, so we look at the enclosure first.

Chimney checks during the season

Mugnaini asks for the chimney to be inspected at least monthly while the oven is in use, because slow fires leave creosote in the flue that can ignite. Smoke rolling out of the arch or a sooty face often traces back to that flue.

Gas as an option on most models

Most residential, portable and commercial Mugnaini ovens can be ordered for wood, gas or a wood-and-gas combination, and the commercial rotating oven carries a Milberg Spitfire burner with self-cleaning brushes. The fuel ordered with the oven decides whether a visit is masonry work or burner work.

Parts

Mugnaini is the US distributor of these Italian ovens and sells accessories for them, such as a storm door for ovens that face regular rain. We confirm the model, the enclosure style and the fuel with Mugnaini before a visit that depends on a refractory piece or a burner part.

Repair or replace

Door, vent, chimney and enclosure repairs, drying a wet oven and patching cracks are all worth doing on a Mugnaini. When the floor or dome has decayed from years of water intrusion, the choice between rebuilding the oven inside its enclosure and replacing it is made on site.

Questions about
Mugnaini pizza ovens.

Are the fine cracks inside my Mugnaini dome a defect?
Mugnaini says fine, shallow cracks inside the dome are natural for refractory castable pieces and do not mean the material has failed. Cracks from overfiring or from skipping the four-day cure are treated differently, so tell us how the oven was cured when you book.
Why is my Mugnaini oven wet inside after rain?
Mugnaini ovens rely on a sealed enclosure and a closed door to keep water out, and recommends a storm door where rain and snow are regular. Water in the floor and dome slows heating and, over time, breaks the masonry down, so we check the enclosure seal and the arch before drying the oven.
How often should the chimney on a Mugnaini oven be checked?
At least once a month during the cooking season, according to Mugnaini, because slow fires leave creosote in the flue. Creosote can ignite into a chimney fire, and a heavily coated flue also pushes smoke out of the arch.
