A stainless outdoor gas pizza oven on a stone counter on a patio, a pizza oven with a wide low mouth and a blue gas flame rolling along the back wall under its dome, a golden pizza sitting on the stone floor inside, the pizza oven clearly the subject, plants softly blurred behind, daylight, seasonless.

Alfa pizza ovens,
specifically.

Alfa Forni builds its pizza ovens near Rome and sells them in North America as stainless steel domes for the backyard, fired by propane, natural gas or wood, plus a compact professional line for pizzerias and food trucks. For a technician, an Alfa is a light steel oven with a firebrick floor and a side-mounted burner, so most visits are about the pilot, the spark button, the burner and the floor bricks rather than masonry.

The Alfa lineup

What is particular
to Alfa.

Alfa's current US home ovens are the Moderno (Portable, 1, 2, 3 and 5 Pizze), Classico (2 and 4 Pizze) and Futuro (2 and 4 Pizze) lines in gas or wood, with a Hybrid Kit that lets a gas model burn wood; older Nano and Brio gas ovens left the factory set for propane. The Quick series covers pizzerias and food trucks, and the model and serial are read from the label on the back of the oven.

The burner sits on the side

Every Alfa gas oven uses what Alfa calls the Sidefire system: the burner runs along one side of the chamber and throws its heat across and over the dome. A cold corner on the burner side, a lazy flame or ash sitting on the burner tells us where to look before we touch the valve.

A pilot that needs 15 seconds of patience

Alfa has you push the knob in, spark the pilot at the rear left of the chamber, then keep the knob held for 15 seconds so the thermocouple warms up. A pilot that dies the moment the knob is released is often a hold that was too short or air still in the line on a first light; one that dies every time after a full hold points to the thermocouple or the valve.

The spark button runs on an AA cell

The ignition button on Alfa gas models carries its own AA battery under the screw-on button head, and Alfa suggests taking it out when the oven sits unused for a long stretch. A silent button is checked with a fresh cell before anything else.

Floor bricks that are meant to be turned over

Alfa treats cracks in the firebrick floor as normal, ships a spare brick with every oven and tells owners they can flip a pitted brick to use its other face. The lightweight insulating brick underneath is brittle by nature, so a crack found there during a visit is not a reason to condemn the oven.

Parts

Alfa asks for Alfa-made parts, and its North American manual says components not produced or approved by Alfa end the coverage. Burners, thermocouples, knobs and floor bricks are model-specific, so we read the back label before ordering and bring the right gas orifice for propane or natural gas.

Repair or replace

A weak pilot, a dead spark button, a sooted burner or a cracked floor brick are all ordinary repairs on an Alfa. When a stainless shell has been bent in a fall or the burner has been ruined by ash from wood fires lit on top of it, a newer oven can make more sense than the parts.

Questions about
Alfa pizza ovens.

Why does the pilot on my Alfa pizza oven go out when I let go of the knob?
The thermocouple needs heat before it will hold the gas valve open, which is why Alfa asks for the knob to stay pressed for 15 seconds after the pilot lights. On a first light after a cold spell, air in the hose can take a few tries to clear. If the pilot still drops after a full hold every time, the thermocouple or its valve needs testing.
My Alfa spark button clicks faintly or not at all. Is the igniter broken?
Start with the AA battery inside the button head, which Alfa supplies with the oven and which weakens over a season. Unscrew the head with the oven off, fit a new cell and try again before booking a visit for the electrode or its lead.
Is a cracked floor brick in my Alfa oven a problem?
Usually not. Alfa says its firebricks can crack without hurting performance, supplies a spare with each oven and suggests turning a pitted brick over. A brick that has broken into loose pieces or rocks under the peel is worth replacing.
Can I burn wood in my Alfa gas pizza oven?
Only with Alfa's Hybrid Kit, which puts a cover over the gas burner and moves the fire to the opposite side of the chamber. Without the cover, ash and embers fall onto the burner, and Alfa's manual excludes burner damage from ash and debris from its coverage.
