A technician in a plain gray work shirt kneels at the arched mouth of a cold domed wood-fired pizza oven, setting a new firebrick into the pizza oven's brick floor with a trowel, a bucket of mortar and a few loose bricks on the counter beside the mouth, daylight, seasonless.

What the pizza oven floor and dome repair
involves.

The floor and the dome are what make a pizza oven bake: the floor stores heat to crisp the base and the dome reflects it down onto the top. Both are refractory, which takes high heat well but moves as it warms and cools and does not forgive water. In a wood-fired oven, a hearth brick can spall, crack or start to rock, a crack in the dome can open and let smoke or light through, and the mouth arch can loosen after years of peels and doors knocking it. In an outdoor gas oven the floor is usually a single cordierite or ceramic stone that cracks across after a fast heat-up while damp. The technician looks at the whole mass cold, taps the floor for hollow spots, and reads each crack for width, direction and whether it has moved. Loose or spalled hearth bricks are lifted, their bed leveled, and new firebrick set; a replacement floor stone is fitted in a gas oven; dome and arch cracks are raked out and packed with refractory mortar or high-heat sealant, and the outer shell is sealed where water got in. The oven is then brought up through a series of small curing fires or low burns, and the owner leaves with a written curing schedule, because firing hard too soon undoes the work.

All service areas

Tampa BayFL · 31 areas

Tampa Bay's summer downpours soak an uncovered masonry dome through its outer render, and steam forming under a hot first fire can split it, so dome repairs there begin with drying fires built small and raised over several days.

OrlandoFL · 30 areas

Orlando's afternoon storms keep backyard domes damp for weeks, and a floor tile that has lifted or a dome with fresh hairline cracks is repaired once the refractory is dry, then sealed so rain beads on it instead of soaking in.

Miami / South FloridaFL · 47 areas

South Florida refractory never truly dries between rains, and salt air crumbles the mortar at a dome's base, so repairs there pair new mortar and patching with a weatherproof shell or a fitted cover for the wet months.

New York MetroNY · 75 areas

New York winters freeze water that has seeped into a garden dome and widen its cracks at every thaw, while pizzeria deck stones crack from cold dough and daily heat, and a shop that cannot close has its stones replaced overnight.

HoustonTX · 36 areas

Houston humidity holds moisture inside a wood-fired oven's dome and floor, and a roaring fire after a wet week can make it pop; the repair patches the spalled spots and shows the owner the slow curing fire that prevents it.

ChicagoIL · 50 areas

Freeze-thaw is the main enemy of Chicagoland pizza domes: water in the refractory expands on every cold night, so a spring visit maps each crack, fills and seals the shell, and advises a snug cover for the following winter.

Los AngelesCA · 95 areas

Los Angeles domes rarely see rain, so their floors wear from use instead, with tiles loosened by constant peel strikes and spalling from fires built too fast, and the repair relevels the floor so pies slide and bake evenly.

San DiegoCA · 31 areas

In San Diego a dome near the ocean takes up marine damp overnight while inland ovens dry out, and in a seismic zone masonry bases and chimney joints can shift, so floor and dome repairs there include a look at the stand beneath.

San Francisco Bay AreaCA · 74 areas

Bay Area fog keeps coastal domes damp through summer, and small ground movements in this seismic zone can open a dome's joints, so repairs there patch cracks, reseal the shell and check the base and the chimney collar together.

Questions about
the pizza oven floor and dome repair.

Can a cracked pizza oven floor be fixed without rebuilding the oven?
Almost always. Individual hearth bricks or tiles can be lifted and replaced, and a gas oven's stone is a single part. A full rebuild is only needed if the floor's insulation below has been soaked and crushed.
Why did my wood-fired oven dome crack after the first big fire of spring?
Moisture soaked into the dome and insulation over the wet months, and a hot fire turned it to steam faster than it could escape. A few small drying fires first, each a bit larger, prevent most of these cracks.
How long after a dome repair can I bake pizza again?
Repair mortar needs to dry and then be cured with a series of gentle fires, usually over several days. The technician leaves a schedule for your oven; following it is what keeps the repair from cracking again.
