A stainless outdoor gas pizza oven on a stone counter on a patio, a pizza oven with a wide low mouth and a blue gas flame rolling along the back wall under its dome, a golden pizza sitting on the stone floor inside, the pizza oven clearly the subject, plants softly blurred behind, daylight, seasonless.

Fontana Forni pizza ovens,
specifically.

Fontana Forni is a family metal shop in the Marche region of Italy that has built wood ovens since the late 1970s, sold in North America by its sole distributor, Fontana Forni USA. The US range runs from all-wood stainless ovens and hybrid gas-and-wood models to the Volta smart gas ovens, the only Fontana ovens with a digital display and numbered codes.

The Fontana Forni lineup

What is particular
to Fontana Forni.

We see the Volta 70 and 90 smart gas ovens, the Maestro 60 gas countertop oven, the new-generation hybrids (Napoli, Firenze and Roma), the wood-fired Margherita, Mangiafuoco and Marinara, the Gusto dual-chamber oven and the Vulcano and Prometeo commercial wood ovens. Only the Volta has a display; the others light with a push knob, a thermocouple and a battery igniter.

Volta ovens report eight numbered codes

The Volta 70 and 90 run on a 12-volt adapter and a controller that lights the burner by spark, watches the flame with a sensor electrode and shows Er1 through Er8 when something in that chain stops answering. Reading the code first tells us whether to bring a probe, an electrode, a valve or a spark module.

Hybrids change fuel with a steel cover

On the hybrid models, switching to wood means laying a stainless plate etched with an F over the burner and building the fire in the wood holder on the right. A burner that has been run without that cover collects ash, and a sluggish flame afterward is often a cleaning job rather than a valve job.

Propane regulators with an excess-flow device

Fontana's manuals name the regulator's excess-flow safety device as the usual reason for a flickering flame or low heat on High, and lay out a reset: close the tank, disconnect, wait, reconnect and open the valve slowly. We run through that reset before suspecting the burner.

Handmade floor stones that chip

The optional Saputo stones are soft, hand-formed clay from Naples that chips at the edges, and Fontana does not treat chips as defects. An uneven stone is shimmed with a little sand underneath, and stones must be fully dry before the oven is heated or they can crack.

Parts

Parts for North American ovens come through Fontana Forni USA, and Fontana's manual asks for the model and serial number with any claim. Volta electrodes, probes and valves are specific to that oven, and natural gas conversion uses its own kit, so we confirm the model and fuel before ordering.

Repair or replace

Igniters, thermocouples, electrodes and regulators are routine repairs on every Fontana, and a Volta code usually leads to one replaceable part. Fontana backs the cooking chamber for longer than the rest of the oven, so a chamber problem is worth raising with Fontana before anyone talks about a new oven.

Questions about
Fontana Forni pizza ovens.

Which Fontana pizza ovens show error codes?
Only the Volta 70 and Volta 90 smart gas ovens, which show Er1 to Er8 on the front display and let you clear a message by holding the power button for three seconds. The Maestro and the hybrid models have a gas knob, a thermocouple and a battery igniter, so their problems show up as a flame that will not light or hold.
Why is the flame on my Fontana gas oven flickering and weak on High?
Fontana's first suspect is the excess-flow safety device in the propane regulator, which trips when the tank is opened quickly. Close the tank, take the regulator off, wait two minutes, reconnect and open the tank slowly. If the flame is still weak, the venturi or burner ports may need cleaning.
My hybrid Fontana burner will not light after a wood fire. What happened?
If the burner cover was not in place during the wood fire, ash can settle on the burner and block its ports or the venturi. The igniter's battery and electrode position are also worth checking. We clean the burner and venturi and confirm a blue, even flame before closing the visit.
