At a Blodgett deck oven the tech starts by asking the cook which deck, which spot on the stone and which hour of the shift the bake went wrong.

Blodgett pizza ovens,
specifically.

Blodgett's pizza line in the US is a short list of deck ovens: the 1048 gas pizza deck with its tall 10-inch chamber, the 961P gas deck and the 1415 countertop electric deck with a digital timer. The gas decks are lit by hand at a red safety-pilot button, so most service calls come down to the pilot, the air around the oven, the thermostat and the deck.

What is particular
to Blodgett.

The 1048 (single or double) is the dedicated gas pizza deck, the 961P is a gas deck set up for pizza, and the 1415 is a countertop electric deck with digital time and temperature. The 900 series manual covers the 961P; each model has its own parts list.

Lit with a match at a red button

The 1048 is started by pushing the red button on the automatic safety pilot valve, lighting the pilot with a match or taper and holding the button about 30 seconds. If the pilot fails, that valve shuts off all gas, so no heat at all often starts at the pilot.

The oven needs air around its base

Blodgett warns against setting its gas decks on a curb base or sealing them to a wall. Pilots that go out and yellow, lazy burner flames are the maker's sign that the oven is short of secondary air.

Rokite decks are tempered slowly

On first startup the 1048 is brought to 600 °F over about four hours in 100-degree steps, which tempers the Rokite deck and burns off residue. A new or replaced deck treated to a fast heat-up is at risk.

Stones and water do not mix

The 1415 countertop deck bakes on stones that must be cleaned only at room temperature. A stone that soaked up water and is heated fast can crack, so Blodgett gives an overnight or 150 °F dry-out first.

Parts

Blodgett's parts lists, manuals and spec sheets for these decks are published on the Middleby parts site and linked from blodgett.com, so the model on the rating plate leads straight to the right burner, valve, thermostat or deck.

Repair or replace

Safety pilot valves, thermostats, burners and decks are all replaceable on a Blodgett gas deck, and a sound cabinet makes repair the usual answer. On a 1415, a failed control or a cracked stone is a part swap rather than a reason to replace the oven.

Questions about
Blodgett pizza ovens.

Why does the pilot on my Blodgett deck oven keep going out?
Blodgett links pilot outages and yellow, floating flames to a shortage of secondary air, often from an oven set on a curb base or sealed to a wall. If the air around the oven is clear, the pilot and safety valve need a technician.
How do I light a Blodgett 1048 pizza deck?
Turn the manual control valve off, push the red button on the safety pilot valve, light the pilot with a match or taper and keep the button pressed about 30 seconds. Then turn the control valve on and set the thermostat.
Do I need to shut the pilot off when I close my Blodgett deck for the night?
No. Blodgett says to turn the main control valve off; the pilot can stay lit.
Can I wipe my Blodgett countertop deck stones with water?
Only lightly, with a damp cloth, and only when they are at room temperature. A stone that absorbs water needs to dry overnight or at 150 °F for two hours before heating.
