A stainless outdoor gas pizza oven on a stone counter on a patio, a pizza oven with a wide low mouth and a blue gas flame rolling along the back wall under its dome, a golden pizza sitting on the stone floor inside, the pizza oven clearly the subject, plants softly blurred behind, daylight, seasonless.

Forno Piombo
Pizza Oven Repair

For a Forno Piombo oven the tech asks for a cold floor and a dry dome, because damp refractory hides its cracks until the next fire opens them.

Forno Piombo pizza ovens,
specifically.

Forno Piombo is a father-and-son shop founded in 2014 in California's Napa Valley area, building wood-fired ovens with thick refractory domes and a small yearly batch of tiled brick ovens. These are masonry ovens first: service is about the dome, the floor, moisture, the vent and, on the Roman 80, an optional Italian gas burner.

The Forno Piombo lineup

What is particular
to Forno Piombo.

The refractory line is the Santino 60 and 70 (stucco or tiled) and the Roman 80; the brick line is the Casa (90 and 110) and the Palazzo (90, 110 and 120); there are also Concessionaire and Caterer oven trailers and an Enzo 90 kit. Only the Roman 80 takes the optional gas burner.

An unusually thick refractory dome

The Santino and Roman 80 carry a 2.5-inch refractory clay dome over a 2-inch firebrick floor, which holds heat for many hours. That mass is why a Forno Piombo that heats slowly or smokes is usually wet inside, not broken.

Brick ovens made in small batches

The Casa and Palazzo are brick domes built to order in a limited run each year and finished in stucco or tile. Repairs to those domes are masonry work matched to one oven, not a swap of standard pieces.

One gas option, on one model

Forno Piombo offers an Avanzini P1+ gas burner from an Italian burner maker for the Roman 80. On an oven fitted with it, a no-light call is a gas burner call, while every other Forno Piombo is a wood oven with no burner at all.

A clear line between normal and serious cracks

Forno Piombo calls expansion cracks normal and not structural, and asks to hear about any crack a quarter inch wide or more. We measure before we call anything a repair, and we check for trapped moisture first, since water droplets on the door after three minutes closed mean the oven needs drying out.

Parts

Forno Piombo makes its brick ovens to order in America, so dome and arch repairs are matched to the oven on site rather than ordered as parts. For a Roman 80 with the Avanzini burner, burner parts come through Forno Piombo from its Italian partner, and we confirm the burner model before a visit.

Repair or replace

Hairline cracks, a soaked dome and a damaged door or vent are repairable on any Forno Piombo. A dome with wide cracks that keep opening, loose pieces or a floor that has broken up is a job to assess on site with Forno Piombo's own guidance before any decision.

Questions about
Forno Piombo pizza ovens.

My Forno Piombo dome is still black after half an hour. Is something wrong?
Forno Piombo expects the roof to turn white, at around 800 degrees, in about 30 to 40 minutes. A dome that stays black usually means too little fire, damp wood or ash that has soaked up moisture. Dry the oven with a slow curing fire before suspecting the dome itself.
How do I know if my Forno Piombo oven has moisture inside?
Put the door on tightly for three minutes, then take it off. Water droplets on the door mean moisture has built up, and the fix is the same slow fire schedule used when the oven was first cured.
When is a crack in a Forno Piombo dome worth a visit?
Expansion cracks are expected and are not structural. Forno Piombo draws the line at a crack a quarter inch wide or more; at that size, or when a crack keeps growing or pieces come loose, book a visit so the dome can be measured and assessed.
Can a Forno Piombo oven run on gas?
The Roman 80 can be fitted with an Avanzini P1+ gas burner that Forno Piombo sells for it. The Santino, Casa and Palazzo are wood ovens.
