Gas smell? Burner off, gas shut, step outside
Gas at a pizza oven is a same-hour problem, indoors or out. Burner off, gas closed, no flame, no switches, doors open, step away, and call the utility or 911 from outside if the smell holds. Keep the oven unlit until the supply, the valve and the burner have been checked on a visit.
What it
usually means.
Every gas pizza oven, from a countertop dome on a patio to a pair of stacked decks in a pizzeria, pulls its fuel through the same chain: a shutoff, a flexible connector or a propane hose and regulator, a safety valve that only stays open while a flame is proven, and a burner under or beside the stone floor. The odor is put into the gas so that a leak anywhere along that chain is noticed long before it becomes dangerous. Outdoors a breeze thins it and tempts people to carry on baking; in a closed pizzeria before opening it can hang for a long time. The usual sources are a burner turned on that never caught, a pilot that went out on an older deck with a standing pilot, a tank coupling not seated after an exchange, a connector strained when a deck oven was rolled out for cleaning, or a valve worn loose at its stem. The order never changes: burner off, gas closed at the shutoff or the tank if it can be reached without standing in the smell, no flame, no switches, doors open, step away. If the odor holds, the gas utility or 911 is called from outside.
The 6 causes, cheapest first
Answer these first
Is the odor strongest at the oven mouth, down at the tank or connector, or at the knob and valve area?
Was a burner turned on that never showed a flame, or did a pilot go dark?
Is the oven fed by a propane tank in its base or by a pipe from the building?
Was the oven moved, cleaned behind, or its tank swapped just before the smell began?
With the shutoff or the tank closed, does the air clear within a few minutes?

Pizza oven gas smell: 5 checks, and none of them costs anything.
Turn the burner knob off and close the gas shutoff or the propane tank valve, only if you can reach it without standing in the smell.
Light nothing, and leave light switches, the igniter button, fans and plugs near the oven exactly as they are.
Open doors and move everyone, staff and guests included, away from the oven.
Also worth checking
- If the odor stays with the gas closed, call the gas utility or 911 once you are outside and well clear.
- Never look for the leak with a flame or loosen a fitting to check it; the connector, the hose and the valve are left for the technician.

6 things pizza oven gas smell near the burner or supply line: act first turns out to be, from a burner opened that never caught to gas valve seeping at the stem.
The cost guide-
01 no repair
A burner opened that never caught
A few clicks with no flame, a pizza order called out, and the cold oven slowly fills with gas under its dome. Knob off, gas closed, the door left open and a full wait before any relight, as the manual gives it.
-
02 lowest
Propane coupling loose after a tank swap
The hand-turned nut between the regulator and the tank can go on crossed or short of home. It is seated true on a visit and every joint to the burner is checked for leaks with the proper solution and a detector.
-
03 low to moderate
Hose or regulator cooked by oven heat
A propane hose routed too close to the hot shell of a countertop dome turns brittle and cracks. The hose and regulator are replaced as a pair and rerouted away from the heat.
-
04 moderate
Standing pilot out and the safety valve not closing
Older deck ovens keep a small pilot burning all day. When it goes out, the thermocouple should let the safety valve shut; a valve that sticks open passes gas into the burner box.
-
05 moderate
Connector kinked when the oven was rolled out
Deck ovens on casters are pulled away from the wall for deep cleaning, and a short or unrestrained connector gets bent or pulled at the quick-disconnect. The leak is traced from the shutoff toward the oven.
-
06 moderate
Gas valve seeping at the stem
Years of heat soaking back from the floor can dry out a valve seal until it weeps gas with the knob closed. The valve is tested under pressure and changed by the technician, never taken apart at home.
