A technician in a plain gray work shirt kneels beside a cold stainless outdoor pizza oven on a patio, shining a small flashlight into the pizza oven's mouth at the stone floor, the burner shield visible at the back, his hands away from any gas fitting, plants softly blurred behind, daylight, seasonless.

What the pizza oven diagnostic visit
involves.

A pizza oven diagnostic visit starts with the story: when the oven last baked well, what changed since, and what the cooks or the family noticed first, whether a pilot that died mid-bake, a floor that stopped browning, smoke rolling out of the mouth or a belt that stalled. Then the technician works through the oven in the order heat is made and kept. On gas, the supply and its shutoff, the connector and the regulator are looked at and every joint is checked with an electronic detector or approved bubble solution, never with a flame. The pilot, igniter, flame sensor and burner are watched through a full light-off, and the flame is judged for shape and color. On an electric deck, the elements, contactors and thermostat are measured. The floor and dome are read cold for cracks, spalling and signs of moisture, and the chimney and draft are checked from the ground with a light and a mirror, not from the roof. Conveyor and rapid-cook ovens add the belt, the drive, the blowers, the probes and any code on the display. You get one written list: what failed, what is wearing, and what each repair means, before any part is changed.

How the visit goes

Pizza oven diagnostic visit,
step by step.

Leave you a written list of the failed part, the parts that are wearing and what each repair involves, before anything is replaced.

01

Hear when the oven last worked well and what changed, and look over where it stands, its cover or canopy and its connections.

02

Leak-check the gas supply with a detector or approved solution, then watch the pilot, igniter, sensor and burner through a full light-off.

03

Read the stone floor, the dome, the door and the chimney draft with the oven cold, looking for cracks, spalling, moisture and soot.

04

Test elements, thermostats, probes, the belt drive and the blowers where the oven has them, and read any code on the display.

Pizza Oven Gas Smell Near the Burner or Supply Line: Act First

6 causes, cheapest first

Before you call

Tell us this when you book

  1. What the oven does now, and whether it started after rain, a long idle spell, a very big fire or a busy night
  2. Whether it is an outdoor gas oven, a wood-fired or hybrid dome, a deck oven or a conveyor or rapid-cook oven
  3. Propane, natural gas, wood or electricity, and where the gas shutoff or the breaker is
  4. The make and model from the rating plate, any code on the display, and roughly how old the oven is

These four steps compare pizza oven repairs with each other; none of them is a figure for your oven. A floor that will not brown may be a weak burner, a drifting thermostat, a cracked stone or an oven that was never given time to preheat, and a pilot that dies may want a thermocouple or a new valve; nobody can tell which over the phone. Your oven is checked cold, lit or switched on and watched before any figure is given. You hear the cost first, parts go in only after that, and the choice is always yours.

All service areas

Tampa BayFL · 31 areas

A diagnostic visit around Tampa Bay often meets a gas pizza oven on a screened lanai or a stone dome in a bayside yard, and the technician first asks when it last rained, since a dome that drank a summer storm heats slowly and reads wrong until it is dried.

OrlandoFL · 30 areas

Orlando calls split between backyard domes at family homes and the busy pizza kitchens that feed visitors near the parks, so a diagnostic visit starts by learning whether the oven bakes a few pies on Saturdays or hundreds every night.

Miami / South FloridaFL · 47 areas

In South Florida the technician on a diagnostic visit reads what salt and constant damp have done before firing anything: pitted ports on a stainless gas pizza oven's burner, a rusted door hinge, or a clay dome whose skin has begun to flake.

New York MetroNY · 75 areas

New York diagnostic visits are mostly in pizzerias, where a deck oven or a conveyor line cannot sit cold through a dinner rush, so the visit is timed around service and the thermostat, the burner flame and the stones are read in that order.

HoustonTX · 36 areas

A Houston diagnostic visit often follows a week of storms, and the technician looks for water in a gas pizza oven's burner box and wet refractory in a wood-fired dome before blaming the igniter or the thermocouple for a slow start.

ChicagoIL · 50 areas

Chicagoland diagnostic visits cover two worlds: the deck ovens behind deep-dish and thin-crust shops that bake all winter, and backyard domes that come out of the freeze in spring with hairline cracks the technician maps before any fire is lit.

Los AngelesCA · 95 areas

Across Los Angeles a diagnostic visit may land at a hillside dome, a gas pizza oven beside a pool or a busy neighborhood pizzeria, and each one begins with how the oven lights, how its flame sits and how evenly the floor holds heat.

San DiegoCA · 31 areas

San Diego diagnostic visits read the setting first: a coastal oven wet with marine-layer damp, or an inland dome baked dry in canyon country, where the technician also checks clearance from brush before advising a hotter fire.

San Francisco Bay AreaCA · 74 areas

Bay Area diagnostic visits run from wood-fired domes in Peninsula gardens to deck ovens in the city's slice shops, and the technician measures the chimney's draw, the gas supply and the floor temperature before naming any part.

Questions about
the pizza oven diagnostic visit.

Does the pizza oven visit cover the masonry base or the island it sits in?
It covers the oven itself and the gas, power and chimney that serve it, so a leak at the connector or a cracked hearth is found. Cracked stucco on the base, a sink or a fridge built into the same counter belong to our sister sites, and the technician tells you which one.
Should the pizza oven be cold when the technician arrives?
For most checks, yes. The dome, the floor and the chimney are read cold, and burners and elements are reached only once the oven has cooled. The technician lights it again during the visit to watch the flame and the heat come up.
Can a pizzeria oven be checked during business hours?
A single deck or one oven in a stack can often be taken out of service while the others keep baking. Tell us your quiet hours and we plan the visit around them, so the oven that needs work has time to cool.
