A stainless outdoor gas pizza oven on a stone counter on a patio, a pizza oven with a wide low mouth and a blue gas flame rolling along the back wall under its dome, a golden pizza sitting on the stone floor inside, the pizza oven clearly the subject, plants softly blurred behind, daylight, seasonless.

Chicago Brick Oven
Pizza Oven Repair

At a Chicago Brick Oven the tech looks at the stand and the base as closely as the oven, since a settling base can crack a hearth from below.

Chicago Brick Oven pizza ovens,
specifically.

Chicago Brick Oven sells refractory pizza ovens in three sizes (CBO-500, CBO-750 and CBO-1000) as DIY kits, countertop ovens, stands and a trailer, plus a CBO-750 Hybrid that burns wood or gas, in residential and commercial versions. The Hybrid is the one with burners, switches and a thermostat; the rest are wood ovens whose service is about the refractory, the flue and the hood.

The Chicago Brick Oven lineup

What is particular
to Chicago Brick Oven.

We service CBO-500, CBO-750 and CBO-1000 DIY kits, CBO-500 and CBO-750 countertop, stand, mobile and Tailgater trailer ovens, and the CBO-750 Hybrid in its residential and commercial countertop, stand and kit versions. Hybrid parts differ between propane and natural gas, so the rating plate and fuel come first.

Two gas burners in the Hybrid

The CBO-750 Hybrid heats its floor from below with an infrared hearth burner controlled by a thermostat dial, and adds a flame burner at the back of the chamber, each on its own switch. A cold floor with a lively back flame, or the reverse, tells us which burner to test.

The back burner is not a fire starter

CBO tells owners not to use the ambient burner to light wood, because that damages its ignitor and safety sensor. A Hybrid that has been lit that way often comes in with an ignitor or sensor problem.

Cracks are part of the refractory

CBO says small cracks will appear in the dome and hearth during curing and cooking and that all its refractory forms small cracks over time. It asks owners to send photos when a crack grows, pieces loosen or performance changes, and that is where a visit begins.

Creosote in the flue and hood

CBO's manual warns that slow fires leave creosote on the flue lining and the exhaust hood, where it can ignite. Smoke spilling from the mouth and soot on the face usually lead us to the flue and hood before the oven itself.

Parts

CBO sells Hybrid parts directly, including the infrared hearth burner, burner boxes, gas valve regulators, conversion kits and a nickel foam burner retrofit kit, as well as hood gaskets and heat deflectors. We match the part to the Hybrid's fuel and burner generation before ordering.

Repair or replace

Ignitors, thermocouples, regulators and hearth burners on a Hybrid, and doors, gaskets and flue parts on any CBO, are routine repairs. A refractory dome or hearth with growing cracks and loose pieces is assessed with CBO's photos-first guidance before deciding between repair and a new oven.

Questions about
Chicago Brick Oven pizza ovens.

My CBO-750 Hybrid floor stays cool even though the gas is on. Why?
The floor is heated by the infrared hearth burner, which is switched separately and run by the thermostat dial. If the dial is set low, or the hearth burner switch is off, only the back flame burner is heating the air. When the switch and dial are right and the floor stays cool, the hearth burner or its ignition needs testing.
Can I use the gas burner to start a wood fire in my CBO Hybrid?
No. CBO says the ambient burner should not be used as a wood fire starter because that damages the ignitor and the safety sensor. Light wood with fire starters and kindling instead.
When is a crack in my Chicago Brick Oven worth a visit?
Small cracks in the dome and hearth are expected as the refractory heats and cools. When a crack keeps growing, pieces come loose or the oven stops heating the way it did, book a visit and have your model details ready.
