A technician in a plain gray work shirt stands at the mouth of a cold domed wood-fired pizza oven, fitting a new arched steel door into the pizza oven's opening, a short chimney with a new cap rising just above, a chimney brush leaning against the base, daylight, seasonless.

What the pizza oven door and chimney repair
involves.

The door and the chimney decide where a pizza oven's heat and smoke go. On a wood-fired oven the door is a loose steel or wooden panel set in the mouth, and the chimney rises from the throat just outside it; the draft pulls smoke up and out while the fire burns at the back. On a deck oven each chamber has a hinged door with springs and sometimes a gasket, and the heat shield above the doors protects the controls. Doors warp from heat, springs weaken, hinges wear, and gaskets harden and crack, so heat pours out over the front and the cooks see scorching above the mouth. Chimneys collect soot and creosote, lose their caps, fill with nests or leaves, or were built too short for the wind, and smoke then comes back into the room or spills from the front of the oven. The technician works from the ground and from the mouth, never from a roof: straightening or replacing doors, fitting new springs, hinges and gaskets, and replacing heat shields; brushing the flue from below, fitting a spark-arresting cap, and checking the draft with a smoke test. Where the chimney is simply too short, the technician explains the options and who builds them.

How the visit goes

Pizza oven door and chimney repair,
step by step.

Light a small fire or run the oven, and confirm with a smoke test that the draft carries smoke up.

01

Check every door for warping, sagging and gaps, and look at the heat shield and the front for scorching.

02

Replace warped doors, weak springs, worn hinges and hardened gaskets, and refit the heat shield.

03

Inspect the chimney and throat from below with a light and mirror for soot, creosote, nests and a missing cap.

04

Brush the flue from the mouth, and fit a new cap or spark screen where one is missing or damaged.

05

Light a small fire or run the oven, and confirm with a smoke test that the draft carries smoke up.

All service areas

Tampa BayFL · 31 areas

Tampa Bay's humid breeze can reverse the draw in a short pizza oven chimney, sending smoke out of the mouth instead of up, so chimney visits there look at the flue's height, its cap and any soot or nest blocking the path.

OrlandoFL · 30 areas

Orlando storms drive rain down an uncapped pizza oven chimney and onto the dome, and a door that swells or a flue with a rusted cap is repaired so the oven stays dry and draws cleanly once the afternoon rain passes.

Miami / South FloridaFL · 47 areas

South Florida salt air rusts the steel flue and door frame of a backyard pizza oven quickly, and a door that no longer seals lets heat escape, so repairs there replace corroded chimney sections, caps and door gaskets together.

New York MetroNY · 75 areas

On dense New York blocks, smoke from a wood- or coal-fired pizza oven drifts toward neighbors' windows and city air rules are strict, so chimney visits there check the draw, the soot load and the cap, and sweeps are booked often.

HoustonTX · 36 areas

Houston's wet months leave the soot in a pizza oven chimney damp and sticky, and creosote builds faster, so a chimney visit there includes a thorough cleaning and a look at the cap that keeps rain and nesting birds out.

ChicagoIL · 50 areas

Chicagoland's winter gusts can push smoke back down a short pizza oven flue, and ice at the chimney's base breaks its seal to the dome, so repairs there reseal that joint and fit a cap built to stand up to the lake wind.

Los AngelesCA · 95 areas

Los Angeles pizza ovens near dry hillsides need a spark arrestor in good shape at the chimney top, and on red-flag days local fire rules may ask that wood fires wait, so chimney visits there check the screen, the cap and the soot.

San DiegoCA · 31 areas

San Diego's canyon neighborhoods sit in fire country, so a wood-fired oven's chimney needs a clean spark arrestor and room from overhanging branches, and a door repair there lets the oven be closed tight when the fire is out.

San Francisco Bay AreaCA · 74 areas

Bay Area air rules may ask that wood fires stay unlit on winter no-burn days, and when the oven is fired, a clean chimney with a strong draw keeps the smoke light, which is what chimney and door repairs there aim for.

Questions about
the pizza oven door and chimney repair.

How often should a wood-fired pizza oven chimney be cleaned?
It depends on how often you fire it and what wood you burn. A backyard oven used most weekends usually needs a yearly cleaning; a pizzeria oven burning every day needs it far more often. Heavy black buildup at the throat is the sign it is due.
Why is there black soot above the mouth of my pizza oven?
Some darkening is normal on a wood-fired oven. Heavy soot means smoke is leaving through the mouth instead of the chimney, from a weak draft, a blocked flue, wet wood or a fire that is too big for the oven.
Can a warped deck oven door be straightened?
Sometimes it can be adjusted back into line along with new springs and hinges. A door that has twisted badly from heat is usually replaced, since a gap along its edge lets heat escape and bakes unevenly.
