Troubleshooting,
guide by guide.

Start here when you would like to know whether a visit is even needed. The section holds a half-hour walk through the supply, the power and the controls with the oven off, a guide to a pilot or burner that goes out as soon as the knob is released, and a map of where each kind of pizza oven keeps its rating plate.

All 18 guides
The front of a cold stainless outdoor gas pizza oven on a patio counter, the pizza oven's door set aside and its empty stone floor in view, the control knob at off, a phone, a small flashlight and a fresh AAA battery lying on the counter beside the pizza oven, a closed propane cylinder under the counter.

Pizza oven troubleshooting in half an hour, with the fire out

The plate, the shutoff and cylinder, the breaker, GFCI and igniter battery, then ash, wood and the door on a dome, or the message on a conveyor screen. What to write down, and the four signs that end the checks.

The lower front of a stainless gas deck pizza oven in a pizzeria, its control panel door open to show a gas valve with a red pilot button and a small steady blue pilot flame behind a sight opening, the closed deck doors of the pizza oven above.

When the pilot will not stay lit after you let go of the button

The safety valve needs a hot sensor before it trusts the flame. Hold times of 10 to 30 seconds from the manuals, the five-minute wait, a knob pushed too deep, wind across the mouth and a pilot flame shrunk by flour dust.

The back corner of a cold stainless outdoor gas pizza oven on a cart on a patio, a small blank metal rating plate riveted to the pizza oven's rear panel lit from the side by a flashlight lying on the cart shelf, the oven's stone floor just visible through the open front.

Model, serial number and gas type, and every maker puts them somewhere else. Where outdoor gas ovens, domes, deck ovens and conveyors keep the plate, the copy in the manual, and how to read one the heat has darkened.

Safe checks with the oven cold.

All of it is done from outside the oven, fire out or knobs at off. A phone camera, a flashlight, a fresh igniter battery and an infrared thermometer are the whole kit; there is no wrench on the list, since no gas fitting gets loosened and no panel comes off.

The checks differ by type, and the guides say which apply where. An outdoor gas oven on a cart starts at the propane cylinder and the GFCI, a wood-fired dome at the ash, the wood and the door, a deck oven at the shutoff and the pilot, and a conveyor at the breaker, the emergency stop and the message on its screen.

Each guide also shows where an owner's work ends. A gas smell, fire outside the chamber, smoke inside a room or a hot electrical smell halts the checks immediately, and gas valves, orifices, thermocouples and wiring sit beyond that line. Two lines of notes on what you tried help the visit far more than a panel already removed.

Questions about
troubleshooting.

Can a half hour of checks save the visit altogether?
Now and then: a shutoff left closed, a propane flow limiter that tripped, a dead igniter battery or a screen message that simply meant warm-up. Even when they do not settle it, the technician can start past everything you have ruled out.
May an owner relight a pilot?
Yes, when you follow the lighting steps printed on the oven or in its manual, including the five-minute wait between attempts. Stop after two or three tries; a pilot that will not hold after that needs a technician, not more attempts.
Why does the rating plate get a guide of its own?
Parts are ordered by the numbers on it, and the gas it names must be the gas the pizza oven is fed. Almost every make also puts it somewhere different, usually out of sight from the front.
Which situations mean no checks at all?
A gas smell, flame reaching out of the mouth toward a hood or canopy, fire in the chimney, smoke filling a room or a burning electrical smell. Close the supply only if it is within easy, safe reach, get people clear and go to the urgent steps for that situation.
