What BAKING
actually means.

The PS638 has a photo eye at the entrance to the baking chamber. When product breaks the beam, the oven raises the blowers to baking speed and shows BAKING for a timed period long enough for the pizza to pass through, then drops back to idle. If BAKING never appears when product goes in, the photo eye is not working.

What to do when BAKING shows on the pizza oven

Before you book,
in this order.

Each step comes from Middleby Marshall's own guidance for BAKING on its pizza ovens. Follow it to the end: the last card says whether this is a visit.

01

If BAKING comes and goes with orders, leave it: that is the energy system working.

02

If product goes in and BAKING does not appear, check that nothing is covering the photo eye at the loading end.

03

A manager can turn Energy Mode off so the oven bakes at full speed all the time, then book a visit to repair the photo eye.

Cleared?

The code has left the display, the decks or the tunnel come up to the set heat and hold it through a full service, the belt keeps its speed and the blowers run steady, all with no part changed. If the same code returns within a week, or on the next busy night, say so when you book.

What not to do

BAKING flickering on and off is not an electrical problem. Underdone pizzas with BAKING never showing point at the photo eye, not the burner.

No repair indicated

Nothing to repair.

No part of the oven has failed; the display is reporting a state someone chose or the oven entered on its own. A cool-down keeps the blowers turning after the heat is off until the cavity or the tunnel has dropped to a safe level, an energy save setting lets the decks sag between rushes, and a menu lock stops anyone on the line from changing the bake times. No part is needed: letting the cool-down run out, or the key sequence in the manual, brings the oven back.

Questions
about BAKING.

Can I clear BAKING myself?
If BAKING comes and goes with orders, leave it: that is the energy system working.
Why does BAKING keep turning on and off on my Middleby Marshall PS638?
Each time product breaks the photo eye beam, the oven speeds up its blowers and shows BAKING for a set time, then returns to idle. That is normal.
My PS638 pizzas come out underdone and BAKING never shows. What is wrong?
The manual points at the photo eye. Until it is repaired, a manager can turn Energy Mode off so the oven bakes at full blower speed.
Where is the photo eye on a Middleby Marshall conveyor?
At the entrance side of the baking chamber, where product first goes in. Keep it clear of flour and cardboard.

Back to your everyday

Still showing BAKING?

A booking with a code goes further when it has the code copied as shown, the model and serial from the rating plate, and a note on whether the oven still lights, heats or moves its belt. With those three, the office can match the likely part to your oven the same day.
