After the Mexican–American War and the Gold Rush, the land that became Carmel Valley was worked for agriculture and horse farms. ## What Carmel Valley does to a pizza oven. The name traces to Robert Stevens, who renamed a farm Mount Carmel Ranch in the 1940s, and it spread to the valley from lower McGonigle Canyon. For anyone burning wood in Carmel Valley, the county's air pollution control district advises letting split firewood season for 6 to 12 months, and hardwoods longer. Every food handler in a San Diego County food facility, Carmel Valley's included, must complete approved food safety training. [All of San Diego](https://pizzaovenrepair.center/locations/san-diego/) ### Newer developments Planned streets fill with families who bought backyard pizza ovens in the same few seasons, and ovens of one age share their weak spots, so a technician who replaces a cracked floor tile on one street often sees the same wear two doors down. ### Custom-built pizza ovens A custom pizza oven set into stone often combines a refractory dome, a gas burner under the floor and a separate wood chamber, each with its own controls, so a technician checks the whole oven on a visit rather than the one part that stopped. ### Family houses Weekly family pizza nights wear a home oven's floor tiles and burner steadily, and flour and cheese that fall through gaps into the burner box can smolder, so the box is cleaned and the floor joints checked on every visit. ## A visit in Carmel Valley.
