Patsy Grimaldi, who learned coal-fired pizza at his uncle's Patsy's Pizzeria in East Harlem, opened Grimaldi's under the Brooklyn Bridge on Old Fulton Street in 1990. ## What DUMBO does to a pizza oven. Grimaldi's later moved next door to 1 Front Street, an 1869 building that had been Brooklyn's first safety deposit bank, where its pies come out of coal-fired brick ovens. In December 2012 Grimaldi opened Juliana's in his old Old Fulton Street space, serving whole pies from a coal-fired oven. The Landmarks Preservation Commission voted on December 18, 2007, to make Dumbo the city's 90th historic district. [All of New York Metro](https://pizzaovenrepair.center/locations/new-york/) ### Tower living Most tower rules keep wood fires and open-flame pizza ovens off private balconies, so pizza in a high-rise comes from a shared gas oven on the amenity terrace or the pizzeria at street level, and a shared oven's igniter and door wear out under many hands. ### Older housing stock Older neighborhoods keep some of the country's longest-running pizzerias, whose deck and brick ovens have been rebuilt around the same flue for decades, and a smoke or draw problem there is traced up the old chimney before anything in the oven is replaced. ### On the water Salt spray from the ocean or a bay settles on a pizza oven's steel door, hinges and flue, and pitting starts within a season, so near salt water the oven is rinsed with fresh water once cool and its door and chimney cap are the first parts inspected. ## A visit in DUMBO.
