Palo Alto families often run a hybrid pizza oven that lights on gas and finishes on wood, and through the long dry season the ash raked from the oven floor is cooled in a metal can before it goes anywhere near mulch or dry leaves. ## What Palo Alto does to a pizza oven. Before joining Prego, the pizza chef Ed LaDou briefly made pizzas at Ecco, an upscale restaurant in the Hyatt Hotel in Palo Alto. Palo Alto has two downtowns, one on University Avenue and one on California Avenue, because it absorbed the neighboring town of Mayfield in 1925. Kingsley, Lincoln and Addison avenues frame Professorville, the historic district where Stanford's early professors made their homes. Palo Alto's local wood smoke ordinance requires newly installed wood-burning devices to be EPA certified and restricts what can go in during a remodel.
